Welcome to umami, the savory taste Japanese researchers added to sweet, sour, salty and bitter. This is a dry sake, with some umami driven character that shimmers in the rich sweet foundation. I am not sure the gold chips (the golden specks you can see in the glass above) added anything, but my girlfriend liked the idea of consuming gold! This is what I would describe as a 3rd tier grade of sake just one step above table sake, so there is not much to say except that it was very smooth and lovely with the above sesame and green tea ice cream! In addition, honjozo is typically not pure rice and has distilled alcohol added. Enjoy.
